Tomato-Cream Penne with Vodka

Ingredients
- 2 cans tomatoes (28 oz) drained
- 2 cups evaporated milk
- 2 tablespoons Olive oil
- 8 cloves garlic, crushed
- 1 teaspoon salt
- 1 teaspoon basil
- 1/2 teaspoon oregano
- 2 tablespoons vodka
- 1 pound penne pasta
- freshly ground black pepper

Preparation
Step 1
1. Puree tomatoes until smooth. Add milk, blend until combined.
2. Saute garlic in oil a minute or two. Add tomato mixture and simmer, stirring occasionally 15 mins.
3. Add salt, basil and oregano, simmer 5 mins.
4. Cook penne.
5. Sauce should have turned orange and reduced by about half. If not, continue to simmer. Stir in vodka, simmer another 5 mins. Add pepper to taste. Ladle over penne.
