Ingredients
- 1/2 c mayonnaise
- 1/4 c chopped fresh chives
- 1/4 c chopped fresh cilantro leaves and tender stems and 1/2 c whole leaves and tender stems
- 1 small jalapeño, seeded and finely chopped
- 1 T lime zest + 1/4 c juice
- 1 t chili powder
- 3/4 t pepper
- 1/2 t kosher salt
- 6 oz. cotija cheese, crumbled (1-1/2 c), divided
- 1-15.5 oz. can pinto beans, drained and rinsed
- 3 c fresh corn kernels (4-5 ears)
- 3 c loosely packed arugula

Step 1
Whisk together mayonnaise, chives, chopped cilantro leaves and stems, jalapeño, lime zest and juice, chili powder, pepper, salt, and half of the cheese and a large bowl until combined. Add beans, corn, arugula, remaining cheese, and whole cilantro leaves and stems and toss to combine.
