Ingredients
- 3 tablespoons extra-virgin olive oil
- 8 cremini mushrooms (baby portobellos), chopped
- 8 shiitake mushrooms, chopped
- 1 shallot, chopped
- Salt and pepper
- 1 1/3 pounds ground turkey
- 2 tablespoons fresh sage
- 1 tablespoon Worcestershire sauce
- 1/2 cup Italian bread crumbs
- 1 egg, beaten
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups chicken stock
- 1 teaspoon poultry seasoning

Preparation
Step 1
1. Saute mushrooms and shallots in oil with s&p until dark and tender. Remove from heat.
2. Transfer mushrooms to a bowl and return pan to stove top. Add turkey to mushrooms. Make a well in the center of the meat. Add sage, Worcestershire, bread crumbs and egg, season. Divide into 4 patties 1" thick.
3. Add 1 tb olive oil to pan, and arrange patties in skillet. Cook 6 mins/side and transfer to a serving plate or individual dinner plates. Return pan to heat, add butter.
4. When butter melts, whisk in flour, cook 1-2 mins. Whisk in stock, season with poultry seasoning, s&p. Simmer until desired thickness, pour over patties.
Notes: These were awesome. One of the best things I've made recently and very, very easy. My only change was to use a package of creminis and no shiitakes. I also didn't have poultry seasoning and so just used a mixture of herbs. David put some Old Bay into the sauce which made it too salty. Definite repeater. Perfect with mashed potatoes.
