Ingredients
- 5 tablespoons olive oil
- 2 cloves garlic, minced
- 1 1/3 cups couscous
- 1 teaspoon cumin
- 1/4 teaspoon cayenne
- 3/4 teaspoon salt
- 1 cup tomato juice
- 1 cup water
- 1 pound Italian sausage, hot or mild
- 1 tablespoon lemon juice
- 1 tomato, diced
- 1/2 cup cilantro, minced

Preparation
Step 1
1. Saute garlic-cayenne and 1/2 tsp salt in 1 tbsp oil until couscous starts to brown; about 3 minutes. Add tomato juice and water. Bring to a simmer, cover, take off heat, and let stand 5 minutes. Cool.
2. Coat sausages with 1/2 tbsp oil. Grill or broil until completely cooked through, about 10 minutes. When cool enough to handle, slice thinly.
3. Toss couscous with lemon juice, 3 1/2 tbsp oil, 1/4 tsp salt, and tomato. Top with sausages and cilantro
Notes: So delicious, economical, and so, so easy. Lightened considerably - light kielbasa instead of the Italian sausages, whole wheat couscous, used only about 1 tbsp oil total (a bit to sauté garlic, etc., then a bit to toss), cilantro at the end. Weeknight rotation meal.
