- Organic, unsweetened coconut
- Peanuts or cashews
- Vegetables
- Red Pepper
- Cauliflower
- Broccoli
- Carrots
- Cabbage
- Swiss Chard
- Zucchini
- Squash
- Pumpkin
- Acorn Squash
- Or any combination therein
- Curry Powder
- Black Mustard Seeds
- Garlic
- Ginger
- Extra Firm Tofu – cubed
- Cilantro
- Basil – Fresh (15-20 leaves)
- Soy sauce
- Rice

Preparation
Step 1
1. Reconstitute coconut milk. 2 cups organic, unsweetened coconut, pour hot water over it in a colander and then use the milk.
2. Toast peanuts or cashews.
3. Sautee black mustard seeds (seeds must pop before you add ginger and garlic or they will burn), ginger, garlic and curry powder
4. Chop veggies—carrots, zucchini, cabbage, swiss chard, cauliflower, broccoli, red pepper or any combination therein.
5. Add veggies to spice mixture. Stir, Cover, Cook until almost soft on high. Add Swiss Chard almost near the end. Add cilantro at the very end.
6. Cube tofu.
7. Combine coconut milk and soy sauce in a small pot. Add tofu (or chicken if you’re having chicken).
