Ingredients
- 10 oz ground beef
- 3/4 lb. gnocchi
- 2 TBS tomato paste
- 1 zucchini
- 2 cloves garlic
- 2 TBS mascarpone chees
- 1 tsp. calabrian chile paste
Preparation
Step 1
Heat a medium pot of salted water to boiling.
Slice zucchini in half lengthwise and thinly slice crosswise.
Chop garlic.
In large nonstick pan drizzle olive oil and heat until hot. Add the zucchini in an even layer. Season with salt and pepper. Cook without stirring for 3-4 minutes, until lightly browned. Transfer to bowl.
In same pan add olive oil and heat until hot. Add ground beef, season. Cook, breaking the meat apart 4-5 minutes. Drain off excess oil.
Add garlic, tomato paste and chili paste. Cook, stirring constantly, 1-2 minutes until combined and beef is cooked.
Add zucchini and 3/4 Cup water. Cook, stirring frequently 2-3 minutes or until the sauce is thickened. Season if necessary.
While the beef cooks, add the gnocchi to the boiling water. Cook 3-4 minutes or until gnocchi floats to top. Drain.
Add gnocchi and mascarpone to the pan and stir throroughly to combine.
