Ingredients
- 1 (3 to 4 lb) chicken
- 1 red onion, finely chopped
- 1 cup thinly sliced celery
- 1 cup (or more) mayonnaise
- salt and freshly ground pepper
- sweet pickle relish

Method:
Bring a large pot of salted water to a boil. Lower the chicken carefully into the water. Be certain the chicken is completely submerged in the water.
Return the water to a rolling boil - boil for 10 minutes. Cover and turn off heat (if using a gas stove, boil for an extra 10 minutes).
Allow chicken to sit covered, for two hours.
Remove chicken from the water. Bone the chicken, discarding the skin. Cut chicken into small cubes and place in a bowl.
Add remaining ingredients, to taste. Cover and refrigerate overnight. Use for sandwiches or hollow-out small tomatoes and stuff with the chicken salad.
* note: 1 T drained and rinsed capers may be added to the salad.
