Ingredients
- 1 tablespoon oil
- 2 cloves garlic, minced
- 1 red onion, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 cup black beans
- 3 carrots, julienned
- 1/2 cup broccoli
- 1/2 cup mushrooms, sliced
- 2 tablespoons chili powder
- 2 tablespoons cumin
- 1/4 cup red wine vinegar
- 1/3 cup brown sugar
- 1 teaspoon salt
- 1 teaspoon pepper

Preparation
Step 1
1. Saute garlic in oil. Add onion-peppers. Saute 5 mins.
2. Add beans-s&p. Saute 10 mins. Serve in tortillas
