Ingredients

  • 2 tablespoons butter
  • 1 cup cornmeal
  • 1 cup flour, or whole wheat pastry flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 2 eggs
  • 1/4 cup butter, melted
  • 4 tablespoons honey
  • 1 cup milk
  • 1 teaspoon vanilla

Preparation

Step 1

1. Heat oven to 425.

2. Put butter in 8" square baking pan and set in oven while heating.

3. Stir dry ingredients; make a well in the center.

4. Whisk together wet ingredients.

5. As soon as the oven is hot, remove the pan and brush butter around the edges. Pour any excess into the wet ingredients.

6. Mix wet and dry ingredients together; pour into pan. Bake until golden, about 25 minutes.

Notes: This was good! I left out the first 2 tbsp butter and just sprayed the pan (although I heated the pan first, then sprayed, then put in the batter, so I'd have the same effect. Not as good as our favorite recipe, but good. Nice and moist.
