Ingredients
- 4 egg yolks
- 1 teaspoon sugar
- 1/8 teaspoon salt
- 2 cups 2% low-fat milk
- 1 piece vanilla bean, 3", split lengthwise, or 1 tsp vanilla
- 3 tablespoons sugar
- 3/4 cup nonfat dry milk
- 1/4 cup brown sugar
- 1 1/2 teaspoons water

Preparation
Step 1
1. Heat oven to 300.
2. Combine egg-salt. Pour milk into a saucepan, scrape in vanilla seeds. Add bean, sugar and dry milk. Heat to 180 degrees, or until bubbles form around the edge, do not boil, whisking occasionally. Discard bean. Gradually stir into eggs.
3. Divide among 6 ramekins, place ramekins in a 9x13" pan. Add hot water to 1" depth in pan. Bake 1 hour or until centers barely move when the pan is touched. Remove from pan, cool completely on rack.
4. Cover and chill at least 4 hours or overnight.
5. Combine sugar and water, microwave on high 30 seconds, stir until sugar dissolves. Microwave on high 60 seconds, pour over each dessert, quickly tipping ramekins to coat evenly. Let harden.
Notes: Really quite simple and very creamy and delicious - an easy repeater!
