Ingredients

  • 1/4 cup sugar
  • 1 tablespoon butter
  • 1 tablespoon egg white
  • 1 1/3 cups chocolate graham cracker crumbs
  • 3 tablespoons dark rum
  • 3 squares semisweet chocolate
  • 2 tablespoons chocolate syrup
  • 8 ounces neufchatel cheese
  • 8 ounces nonfat cream cheese
  • 1 cup sugar
  • 2 tablespoons cocoa
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 2 eggs
  • 1/2 cup lowfat sour cream
  • 1 tablespoon sugar
  • 2 teaspoons cocoa

Preparation

Step 1

1. Heat oven to 350.

2. Beat sugar-egg. Blend in crumbs. Press into bottom and 1" up sides of 8" springform pan. Bake 10 mins. Cool.

3. Simmer rum and chocolate in double boiler 2 mins. Remove from heat. Add syrup.

4. Reduce oven temp to 300.

5. Beat cheeses. Add sugar-salt. Beat until smooth. Add rum. Blend in. Add eggs one at a time. Pour into pan.

6. Bake 40 mins.

7. Mix sour cream-cocoa. Spread over cheesecake. Turn oven off.

8. Let sit 45 mins with door closed. Remove from oven. Cool to room temperature. Cover and chill at least 8 hours.
