Ingredients
- 2 10-inch pie crusts, baked
- 4 eggs
- 2 cups light cream (10%)
- S&P
- 1/8 tsp. nutmeg
- 2 cups Gruyère or Swiss cheese, grated
- 2 Tbsp. fresh chives, chopped
- 1 11-ounce tin lobster
- 4 Tbsp. Parmesan cheese

Step 1
Preheat oven to 350*.
Whisk eggs in medium sized bowl, add cream and whisk together. Add salt , pepper and nutmeg.
Spread lobster over base of both pie shells. Sprinkle grated cheese then chives over top of lobster.
Pour egg mixture into both pie shells and bake at 350* for 25-30 minutes or until filling is set.
Turn oven to broil. Sprinkle Parmesan cheese over top and broil until cheese is lightly browned.
Serve hot or cold and garnish with chopped parsley or chives.
