Melon Mojitos

Ingredients
- 1 cup sugar
- 1 cup water
- zest of 1 lime
- 1 " chunk of fresh ginger
- 1/2 honeydew melon
- 1 cup simple syrup
- 1 cup midori melon liquor
- 2 cup white rum
- juice of 6 limes
- zest of 6 limes
- 20 + fresh mint leaves
- lots of ice
- Sprite to add to cocktail, optional
- 1/2 cantelope
- 1/2 honeydew
- 16 skewers or swizzle stick swords

Step 1
1. Prepare simple syrup by simmering sugar, water, lime and ginger for 5 mins. Let cool.
2. Prepare garnishes by making melon balls with 1/2 honeydew and cantelope. Alternate melon balls, 3 on each of 16 skewers. Put in tupperware container and chill.
3. Prepare drink mixture by first pureeing remaining 1/2 of honeydew and scraps from honeydew balls. Divide this in half. Divide remaining mojito ingredients in half. Now add half of these mojito ingredients to blender. Fill blender with ice and blend until slushy. Put in large tupperware container. Repeat with 2nd batch. Add to container and freeze for at least 2 hours.
NOTE: "I froze mine for 2 hours and mixture was just slightly slushy. You may want to pulse in the blender a few seconds. We didn't add 7-up or sprite to them but if you let yours freeze longer you might want to. Pour into a 1 gallon pitcher and put in cooler along with a container of melon skewers and cups and you have cold cocktails for everyone "to go".
