Ingredients

  • 1 teaspoon extra virgin olive oil
  • 1/2 cup red onion; chopped
  • 1/2 teaspoon dried thyme (or 1-1/2 teasp fresh
  • 1/2 teaspoon salt (divided)
  • 4 4 ounce boned chicken breast halves
  • 1/4 cup dry white wine
  • 1/3 cup seedless rasberry preserves
  • or other flavor
  • 2 tablespoon balsamic vinegar
  • 1/4 teaspoon black pepper

Preparation

Step 1

Heat oil in a large skillet coated with cooking spray over med/high heat
until hot. Add onions and saute a few minutes; remove from pan and set
aside.

Combine thyme and 1/4 teaspoon salt and sprinkle over chicken.

Add chicken to skillet, saute six minutes per side until done. Remove
chicken from skillet and keep warm.

Deglaze pan with white wine, reduce heat to med/low. Add 1/4 teaspoon salt,
preserves, vinegar and pepper, stirring constantly until preserves melt.
Add chicken and onions back to pan and coat with sauce. Serve chicken
breasts with two tablespoons sauce.
