Ingredients

  • 1/3 c graham cracker crumbs
  • 1 TBSP sugar
  • 2 TBSP butter, melted
  • 4 oz cream cheese, softened
  • 1/4 c sugar
  • 2 TBSP all purpose flour
  • 2 TBSP beaten egg
  • 1/4 tsp vanilla extract
  • 6 mini peanut butter cups

Step 1

1. Preheat oven to 350.

2. In a small bowl, combine the cracker crumbs, sugar, and butter. Press into the bottom and partly up the sides of six paper lined baking cups, or six buttered mini cheesecake molds.

3. In a small bowl, beat the cream cheese, sugar, and flour until smooth. Add egg and vanilla; beat on low speed just until combined. Place a peanut butter cup in the center of each muffin tin. Fill with cream cheese mixture.

4. Bake at 350 for 15-18 minutes or until center is set. Cool on a wire rack for 10 minutes before removing from pan to cool completely. Refrigerate for at least 2 hours before serving
