Caramel-Pecan Upside Down Cake Mix

Ingredients
- Topping Packet:
- Mix-
- 3/4 c sugar
- 1 1/2 t b powder
- 1/2 t salt
- 1 1/2 c flour
- 3/4 c brown sugar
- 1 c peans, coarsely chop
- Layer in 1 qt jar according to order given, packing tightly. Mix topping and place in small plastic bag. Place this in top of jar.

Step 1
To make:
1 jar caramel-pecan upside down cake mix
1/3 c butter/margarine
1/3 c corn syrup
3/4 c shortening
2 eggs
1 c milk
1 t vanilla
Preheat oven 350*. Remove topping packet from jar. Place packet contents in saucepan and cook with butter and corn syrup until sugar is dissolved. Spoon this mixutre into greased 7 x 11" pan or 9" round pan. Empty remaining contents of jar into mixing bowl, stirring to combine. Cut shortenting into dry ingredients. Make a well in the center and add eggs, milk and vanilla. Mix on low speed for 1 min, scrape bowl sides then mix on medium speed for another 2 min. Pour batter over pecan caramel mixture. Bake 30 min. Cook cake for 5 min before inverting onto serving plate.
