Ingredients

  • 1 1/2 cups warm water (100 to 110 degrees)
  • 1 package rapid rise active yeast (I use what ever I have)
  • 1/2 tsp. granulated sugar
  • 4 1/2 cups all purpose flour
  • 3 Tbsp. extra virgin olive oil
  • 2 tsp. Kosher salt

Step 1

In the bowl of an eletric stand mixer, combine the water, yeast, and sugar. Stir briefly and let stand for 5 minutes or until the top surface has a thin, frothy layer (this indicates that the yeast is active). Add flour, oil, and salt. Fit the mixer with the dough hook and mix on low speed for about 1 minute or until the dough comes together. Increase the speed to medium. Continue to mix until the dough is slightly sticky, smooth and elastic, about 10 minutes. Form the dough into a ball and place in a lightly oiled bowl. Turn it over to coat all sides and tightly cover the bowl with plastic wrap. Allow the dough to rise in a warm place until it has doubled in size. 1 1/2 to 2 hours.

TO GRILL: Take dough and separate into 8 balls. Lightly rub olive oil unto the balls and place one ball onto wax paper. Gently roll it out into a circle. Place wax paper on top and repeat. Stack on top of each other...

Preheat grill to medium heat.. place side with no wax paper down on the grill cook for 1 minute, remove wax paper . Cook for a total of 2-5 minutes or until dough is well marked. Take off grill and place ingredients onto the cooked side then put back on grill till other side is cooked and cheese is melted, about 2-5 minutes.
