Ingredients

  • 1/2 cuo chopped green pepper
  • 1 1/2 cup grated raw carrots
  • 1 pkg. chopped frozen spinach ( cooked, drained, cooled)
  • 1 cup chopped onion
  • 6 tbl melted butter
  • 2 - 3 eggs3/4 cup matzo meal
  • salt, pepper to taste

Step 1


saute fresh vegetables in butter; combine with spinach; add eggs & matza meal, salt & pepper. Cool in refrigerator at least 2 hours.
Form tablespoon size balls & place on greased baking sheets. Bake in 350 degree oven about 30 minutes.

May be prepared up to 48 hours in advance and reheated.
