Ingredients

  • 2 Tbsp. olive oil
  • 1/2 lb. boneless chicken breast, cut into strips
  • 1/2 lb. sausage, cut into chunks
  • 2 cloves garlic, minced
  • 1 large can diced tomatoes
  • 2 cups chicken broth
  • 3 cups water
  • S&P to taste
  • dash cayenne pepper
  • 1/4 tsp. saffron or turmeric
  • 2 cups uncooked rice
  • 1 dozen clams, well scrubbed
  • 1 dozen mussels, well scrubbed
  • 1 lb. shrimp, peeled and deveined
  • 2 red peppers, sliced and sautéed
  • 1 cup frozen peas, thawed but not cooked
  • parsley
  • 1 can sliced black olives

Preparation

Step 1

In a large Dutch oven, brown chicken in olive oil. Add sausage to pan and brown.

Add garlic, tomatoes, broth, water and seasonings. Simmer 15 minutes.

Add rice to mixture and cook for about 20 minutes, stirring occasionally.

Add clams, mussels, shrimp, peppers, peas and parsley. Cook about 10 minutes longer or until clams and mussels open and rice is tender.

Sprinkle with parsley and olives before serving with slices of a fresh baguette.
