Ingredients

  • 2 Tbsp. butter
  • 1 bunch green onion
  • 1 lb peeled and deveined shrimp
  • 1 4 oz can chopped green chiles
  • 1 4 oz jar diced pimiento
  • 1 can cream of mushroom
  • 1 can cream of shrimp
  • 8 oz creamcheese
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 10 8 in flour tortillas
  • 2 cups shredded monterey jack cheese

Step 1

melt butter in large saucepan. Add onions and saute until tender. Add shrimp, continue sauteing until shrimp are pink. Add chilies and half of pimentos. Add soups, creamcheese, salt, and pepper.

Stir over medium heat until creamcheese is melted. Cool. Use about half the mixture to fill tortillas. Roll up, place seam side down in a greased 9" x 13" baking dish. Top with remaining sauce, reserved pimientos, and shredded cheese.

Bake at 325 degrees for 30 minutes.
