Ingredients
- 1 1/4 cups firmly packed brown sugar
- 3/4 cup crisco butter flavor shortening
- 1 lg egg
- 1 tbsp grated orange peel
- 2 tbsp orange juice
- 1 tsp vanilla
- 1/2 tsp orange or lemon extract
- 3 cups quick rolled oates
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground ginger
- 1 can crushed pineapple (8oz, well drained)
- 1 cup flaked coconut
- 1 cup chopped macadamia nuts

Step 1
1. Preheat oven to 375F. Spray cookie sheets with cooking spray, set aside.
2. In a mixing bowl, beat brown sugar, shortening, egg, orange peel, orange juice, vanilla and orange extracts on medium seed until well mixed.
3. In another bowl, put oats, flour, baking soda, salt and ginger. Mix with spoon until combined. Add oat mixture to the shortening mixture a little at a time with mixer on low speed, just until blended.
4. Stir in pineapple, coconut and macadamia nuts. Drop by rounded tbsp 2" apart on prepared baking sheets. Bake for 10-12 mins or until cookies are lightly browned. Cool for 2 mins, place on a cooling rack to cool completely.
