Ingredients

  • Crust:
  • 1 1/3 cups shortbread cookie crumbs( Lorna doones)
  • 1/4 cup sugar
  • 4 tblsp melted butter
  • Batter:
  • 8 oz cream cheese
  • 1/2 cup sour cream
  • 2 eggs
  • 1/4 cup oil
  • 1/4 cup water
  • 1 3/4 oz pkg lemon instant pudding
  • 1 lemon boxed cake
  • 1/3 cup lemon curd
  • Curd:
  • 3 lemons,zest and juice
  • 1 cup sugar
  • 4 eggs
  • 1/2 cup butter

Preparation

Step 1

Preheat the oven 350*
place the cookie crumbs, sugar and melted butter in a bowl.
Mix the cream cheese and sour cream, add the eggs one at a time,add oil and water, then add the cake mix and jello pudding. Beat for 2 minutes.
To make the curd, place the zest and sugar into food processor, add the lemon juice and eggs and process till smooth. Slowly add the butter. Then cook over double boiler for about 5 minutes until sugar has dissolved and mixture is thick.
Place a tblsp of crust mixture into muffin tins. Place 1/4 cup of batter in tins. Pipe 1 tsp curd into muffins. Sprinkle extra crumbs over top. Bake for 22 minutes.
