Ingredients
- 1 pound ground beef
- 2 cups lentils
- 1 cup barley
- 12 cups vegetable broth
- 2-10 oz cans of beef broth
- 1 large stalk celery, diced
- 2 carrots, diced
- 1/2 cup onion, diced
- 4 cups chopped tomatoes
- 2-3 cloves of garlic, minced
- 1 teaspoon basil
- 1 teaspoon thyme
- 2 bay leaves

Preparation
Step 1
Brown the beef and drain.
Add lentils, barley, vegetable broth and beef broth. Bring to a boil, turn down heat and simmer for 30 minutes.
Add celery, carrots, onion, tomatoes, garlic, basil, thyme and bay leaves. Cook 90 minutes.
