Amazin' Apple Cake

• 1/3 cup plus 1 tablespoon brown sugar
• 1 cup all-purpose flour
• 2 teaspoons baking powder
• 1/8 teaspoon salt
• 1/2 teaspoon ground cinnamon
• 1/4 cup reduced-fat milk
• 2 medium apples, peeled, cored, and thinly sliced

Preheat oven to 350 degrees F. Coat a 9-inch cake pan with cooking spray.

In a large bowl, with an electric mixer, beat eggs and 1/3 cup brown sugar until creamy. Add flour, baking powder, salt, cinnamon, and milk; mix well. Gently stir in half the apples until evenly coated. Pour batter into cake pan. Arrange remaining apple slices over batter in a circle. Sprinkle with remaining brown sugar.

Bake 30 to 35 minutes, or until toothpick inserted in center comes out clean. Serve warm.
