Ingredients

  • 2 chayote squash, halved, cored and cut into fine dice (do not peel)
  • 1 jalapeno, halved, seeded and cut into fine dice
  • 1 red bell pepper, halved, seeded and cut into fine dice
  • 1 firrn avocado, halved, pit removed and cut into fine dice
  • 1/2 cup finely sliced green onion
  • 2 T chopped cilantro
  • 1 t oregano
  • 2 T lime juice
  • 1 t red chile powder
  • 1/4 lb finely cubed cheddar cheese
  • salt and pepper to taste
  • 1/3 cup white wine vinegar
  • 2 T olive oil

Preparation

Step 1

Combine all ingredients, except the vinegar and olive oil. Toss lightly. Whisk (emulsify) the vinegar and olive oil and mix into salad. Cover and chill.
