Jim's Chayote Salad

Ingredients
- 2 chayote squash, halved, cored and cut into fine dice (do not peel)
- 1 jalapeno, halved, seeded and cut into fine dice
- 1 red bell pepper, halved, seeded and cut into fine dice
- 1 firrn avocado, halved, pit removed and cut into fine dice
- 1/2 cup finely sliced green onion
- 2 T chopped cilantro
- 1 t oregano
- 2 T lime juice
- 1 t red chile powder
- 1/4 lb finely cubed cheddar cheese
- salt and pepper to taste
- 1/3 cup white wine vinegar
- 2 T olive oil

Preparation
Step 1
Combine all ingredients, except the vinegar and olive oil. Toss lightly. Whisk (emulsify) the vinegar and olive oil and mix into salad. Cover and chill.
