Ingredients
- 1/4 cup olive oil
- 3 large carrots, diced
- 1 large chopped onion
- 3 stalks celery, chopped
- 1/8 cup minced garlic
- 2 roasted peeled seeded and chopped
- 1 tsp salt
- 1/2 tsp cumin
- 1 tblsp bouillon
- 3 quarts broth
- 1/2 bunch cilantro
- 3 cups chopped chicken or turkey
- 1/2 cup butter
- 1 cup flour
- Hot sauce to taste
- 1 cup cream or evaporate milk

Step 1
Sauté the veg in the butter and then add the flour and cook for at least one minute. Add the broth and flavorings, then the chicken. When everything is heated through add the cilantro . Season to taste then add cream. Hot sauce at the last.
