Ingredients
- 4 cups tomato wedges
- 1 cup peeled cucumber chunks
- 1/2 cup green bell pepper chunks
- 1 whole medium scallion
- 2 Tbs. red wine vinegar
- 2 tsp. olive oil
- 1 clove garlic minced
- 1/4 tsp. salt, or to taste

Step 1
Place all the ingredients in a blender or food processor. Cover and puree. Chill.
VARIATION:
For a spicier version, add 1/2 jalapeno pepper or 1/8 to 1/4 tsp. ground red pepper.
