Ingredients

  • 8 pounds lump crabmeat, drained
  • 4 cups toasted bread crumbs
  • 4 eggs, lightly beaten
  • 4 tbsp. dry mustard
  • 8 tbsp. red bell pepper, finely chopped
  • 1/2 cup lemon juice
  • 2 tbsp. Old Bay seasoning
  • 1 1/3 cups mayonnaise
  • 4 tbsp. horseradish
  • 8 tsp. green bell pepper, finely chopped
  • 8 tsp. ground black pepper
  • 1 tsp. cayenne pepper
  • 1 cup olive oil

Preparation

Step 1

1. Combine all ingredients except oil.

2. Shape into 3-oz. patties for appetizers; 6 oz. for entrees.

3. Cook in oil over moderately high heat, about 3 minutes each side until golden.
