Step 1
1. Slice tomatoes in half lengthwise. Arrange on cookie sheet and sprinkle with salt. Roast in oven 250 for (5) hours.
2. Add 2 TB olive oil to skillet and roast small green peppers until blistered. Drain on paper towel
3. Break up a brick of Feta in middle of serving platter. Arrange tomatoes around edge; place peppers on tomatoes. Drizzle some olive oil on Feta.
4. Sprinkle with chopped mint and oregano
