Ingredients
- 2 apples, peeled, cored, and sliced
- 1/4 cup fresh or frozen cranberries
- 1/4 cup plus 1 tblsp. Sugar
- 1/4 tsp. Cinnamon
- 5 tblsp. Butter
- 1/2 cup water
- 3 eggs
- 3/4 cup flour
- 1/4 tsp.salt
- 3/4 cup milk

Preheat oven to 400*
In a saucepan melt 2 tblsp. Of the butter and add the 1/4 cup sugar and cinnamon . Then cook the apples and cranberries for about 12 minutes, adding the water halfway through cooking.
Heat an 11 inch sauté pan. Place eggs in blender on medium till frothy, add the flour,salt, and the 1 tblsp. Sugar and blend for 2 minutes. Melt the remaining3 tblsp. Butter in hot skillet, then pour the batter in. Then distribute the apple compote over the batter. Put in hot oven and bake for about 25 minutes. Dust with powdered sugar and serve immediately.
