Preparation
Step 1
1. Put all ingredients into bread machine pan in the order they are listed. Except do not add the cornmeal.
2. Start bread machine on the dough cycle.
3. When cycle is finished, sprinkle cornmeal over a cookie sheet then dust your hands with flour.
4. Remove dough from pan and divide into 8-10 equal portions. Shape each portion into ball and smash flat so it resembles a smallish muffin.
5. Place onto cookie sheet. Dust the tops of all the muffins with cornmeal, then cover loosely with plastic wrap and let rise 20-30 minutes.
6. Preheat a dry griddle pan to medium heat on your stove top. Cook muffins 5-7 minutes each side, or until golden.
7. Split muffins with a fork and serve with your favorite topping.
8. These are easily frozen then reheated in oven or toaster, but are much better when fresh!
