Coffee Bars II

Ingredients

• ICING:
• 1 cup raisins
• 2 teaspoons cinnamon
• 2/3 cup cold strong coffee
• 1 teaspoon vanilla
• .............................
• 2/3 cup shortening
• 1 cup sugar
• 2 eggs
• 1 1/2 cups cake flour
• 1/2 teaspoon baking powder
• 1/2 teaspoon baking soda
• 1/4 teaspoon salt
• .............................
• Confectioner's sugar
• Cold coffee

Preparation

Step 1

Mix raisins, cinnamon, coffee an vanilla in a bowl. Let stand while thew other ingredients are well mixed.

Mix as ordinary cake. Add the coffee-raisin mixture and blend in.

Pour into greased 12" x 8" pan. Bake at 350 degrees for 30 minutes. Test for doneness with toothpick.

Ice with 1 cup powdered sugar and enough coffee to make icing thin enough to drizzle over top of cake.
