Preparation

Step 1

Add all dry ingredients, make a well, and to this add the beaten eggs, oil, and juice. Flour your dough board and knead dough until smooth for rolling. Cut the dough in half and roll half at a time.
For apple Cake
Roll first half and place into a large baking pan, 14" x 10" x 2" that has been slightly oiled. Cut 5 lbs cored and peeled baking apples into pan over dough, cover apples generously with cinnamon and sugar combination. Place second half of rolled dough over apples. Pinch edges together and cut off excess on sides of pan.
With the pointed edge of a knife, make small openings in the top of the cake for the escape of steam and brush a little oil on top. Add cinnamon and sugar combination. Bake in oven that has been preheated to 375 degrees for approx 1 hour.
For Rugelach
follow exact instructions for above up to rolling the first half. When that is completed, cover first half with a little oil, cinnamon and sugar combination, raisins & chopped nuts. Then cut triangles & rolls into crescents. Place on a slightly oiled cookie sheet. Bake 35 -40 mins @ 375
