Ingredients

  • 1 4-ounce package goat cheese (chevre) softened
  • 1 tablespoon honey
  • 1/4 teaspoon finely shredded lemon peel
  • 1 16-ounce can Boston brown bread, cut into 12 slices.
  • 2 tablespoons fig jam
  • 1/4 cup small fresh basil leaves
  • Nonstick cooking spray
  • Note: Soft, moist, and easy-to-use canned bread can be fund in the baked good isle of your supermarket.
  • Start to finish 20 minutes.

Step 1

1. In a small bowl, combine goat cheese, honey, and lemon peel.

2. Divide half of the cheese mixture among four bread slices, spreading to edges. Top with half of the fig jam; add half of the basil. Top with four more bread slices. Top with the remaining cheese mixture and remaining fig jam, add the remaining basil. Cover with the remaining four bread slices. Lightly coat the outsides of sandwiches with cooking spray.

3. Coat a large skillet with cooking spray; heat over medium heat. Add sandwiches; cook about 6 minutes or until lightly toasted, turning once. Cut each sandwich in half. Makes 8 servings.
