Ingredients

  • 12 1/2 lbs. tomatoes
  • 2 medium onions
  • 1/4 tsp. Cayenne
  • 2 cups cider vinegar
  • 1 1/2 tblsp. broken cinnamon sticks
  • 1 tblsp. Whole cloves
  • 3 cloves garlic
  • 1 tblsp. Paprika
  • 1 cup sugar
  • 2 1/2 tsp. Salt

Step 1

Wash and slice the tomatoes and boil for about 15 minutes or until soft. In another bowl slice the onions and cook in a small amount of water for about the same time. Run the cooked veg through the sieve. Mix the onion and tomato. Add the cayenne, bring to a boil. Reduce this at a boil until 1/2 it's original volume. Put vinegar into saucepan and add the spices in a bag. Simmer this mixture for 30 min and then bring tit to a boil. Cover and remove from heat. When tomatoes have reduced add vinegar ( of which their should be 1 1/4 cups). Add paprika, sugar and salt. Boil rapidly until desired consistently is reached. Seal in jars.
