Ingredients
- 2 eggs, beaten
- 1/2 C. white sugar
- 1 large onion, diced
- 1 C. self-rising flour
- 1 C. self-rising cornmeal
- oil for frying

Directions
In a medium bowl, combine eggs, sugar, and onion. Blend in flour and cornmeal. Heat 2 inches of oil to 375 degrees. Drop batter by rounded teaspoonfuls into hot oil, and fry until golden brown. Cook in batches to maintain oil temperature. Drain briefly on paper towels. Serve hot.
Makes 25 hush puppies.
