A simple lemon and garlic marinade and a sprinkle of herbs and seasonings lends lots of zest to baked cod fillets in this recipe. You could easily substitute scrod, hake, haddock, or pollock for the cod.

Keep it simple and serve the fish with parslied small red potatoes and green beans.

Ingredients

  • 3 tablespoons fresh lemon juice.
  • 1 garlic clove, minced
  • 4 (6-ounce) cod fillets
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon olive oil
  • 2 teaspooons grated lemon zest
  • 3/4 teaspoon salt
  • 1/2 teaspoon coarsley ground black pepper

Preparation

Step 1

1. Preheat the oven to 450 degrees F. Coat a baking sheet with nonstick spray.

2. Combine the lemon juice and garlic in a large, shallow bowl. Add the cod fillets, turn to coat, and let stand 10 minutes.

3. In another bowl, combine the parsley, oil, lemon zest, salt, and pepper. Transfer the cod fillets to the baking sheet and press an equal amount of the parsley mixture onto each fillet. Bake until the fish is just opaque in the center, 8-10 minutes.
