Pie - Gluten Free Pumpkin Mousse Pie Recipe

- 1 gluten-free pumpkin pie crust recipe
- 12 oz (1 1/2 packages) gluten-free cream cheese, softened (Philadelphia)
- 1 1/2 c canned 100% pumpkin puree
- 1 large (5.1 oz) box Jell-O brand vanilla instant pudding
- 1 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp allspice
- 3/4 c whole milk
- 1 c heavy whipping cream
- 3 tbsp confectioners' sugar
- 1/2 tsp pure vanilla extract

Step 1
To the bowl of your mixer, add cream cheese and pumpkin puree and beat on medium speed until creamy, about 3 minutes.
Add instant pudding mix, cinnamon, nutmeg, and allspice, and beat on medium speed just until combined.
With mixer running, slowly pour in milk.
Pour the mixture into the crust and evenly distribute.
When ready to serve, make the sweetened whipped cream: Add cream, confectioners' sugar, and vanilla to a bowl. Using your electric mixer, beat on high speed until soft peaks form.
Top the pie with sweetened whipped cream. In addition, you can garnish the top with broken pieces of nut brittle and/or chopped gluten-free chocolate (see recipe below). As an alternative to the chocolate, gluten-free caramel sauce is delicious, as well.
If you would like to make a pumpkin spiced nut brittle topping, use pecans. They complement pumpkin well. Just combine 1 stick of butter, 1/2 cup sugar, 1/2 teaspoon cinnamon, 1/8 teaspoon nutmeg, a pinch of allspice, and 2 tablespoons water in a non-stick skillet over medium-high heat. Stir mixture, allow butter to melt, and then add 1/2 cup or more chopped pecans. Bring to a boil and cook for about 15 minutes or until amber in color. Turn it onto a baking sheet and spread evenly. Refrigerate until firm. Then crack into small pieces and toss with chopped chocolate. Sprinkle the crumble over the whipped cream or directly on the pie.
If you make the filling yourself (from pumpkin pulp, eggs, cream and spices, you can make sure that there is no gluten (gluten comes from flour) in it. If you purchase a mix to make it you will need to purchase a product which is sold as being gluten free. However, please note that the pastry case of the pie will have flour (and therefore gluten) in it unless you make the pastry out of a treated flour that is sold as being gluten free.
