Ingredients
- 12 oz pitted prunes
- 3/4 cup mashed bananas
- 2 eggs
- 1 cup whole wheat pastry, or mixture with AP
- 1/2 cup unsweetened cocoa
- 2 tsp ea bkg powder and cinnamon
- 1 1/2 tsp bkg soda
- 1 cup chopped walnuts
- 1/2 cup banana chips, opt
- 1 cup chocolate chips

Step 1
In a small saucepan combine the prunes and 2 cups water to boil. Boil for 20 minutes. Drain( save juice)
preheat the oven to 350*. Spray a loaf pan. In a food processor whirl prunes and bananas until very smooth. Add eggs and whir to combine. In a large bowl sift the flour bkg powder, soda, and cinnamon, add the nuts and chips. Combine and pour into the pan. Bake for45-50 minutes.
Shortcut:
Substitute 1 1/2 cups prune baby food for the prunes and omit water.
