Ingredients

  • 10 oz. top sirloin steak
  • 1 tsp cumin
  • 1 tsp salt
  • 15.5-oz can black beans, rinsed and drained
  • 1 cup frozen corn kernels
  • 2 scallions, sliced thin
  • 5 cups Romaine lettuce, chopped
  • 1 medium tomato, chopped
  • 1 cup salsa
  • Whole wheat tortillas or wraps

Preparation

Step 1

Let steak sit out for 10 minutes to reach room temperature. Mix cumin and salt; sprinkle on both sides of sirloin. Grill or broil steak for 5-6 minutes each side, then let sit to cool. Slice thin.

Soak frozen corn kernels in cool water to thaw; drain. Combine corn, black beans and scallions in large bowl and toss. Add lettuce, tomato, steak slices and salsa and toss again.

Spoon mixture into whole wheat tortillas and roll up to eat.

NOTE: original recipe included cilantro, which I don't like, so I ommitted it.
