Ingredients

  • 2 cups flour
  • 2 eggs
  • 1 teaspoon salt
  • 1 Tablespoon olive oil
  • 1 jigger (shy) water

Preparation

Step 1

Throw all but water into food processor. Add water slowly, until small balls start to form as you mix it. Don't add more water than you need--or you'll have to roll it thru the machine and flour it lots longer! Cut into 2 balls, 1/2 pound each.

Roll out to 5 on the pasta machine.

To cook, throw it in boiling water just long enough for the pasta to rise to the surface 3 minutes or so...
