  • 1 rack [about 4 pounds] pork spareribs
  • 1 tsp salt
  • 1 orange
  • 1 medium onion chopped
  • 1 cup catchup
  • 1/2 cup molasses
  • 1/3 cup cider vinegar
  • 1 tbs hot pepper sauce
  • 2 tsp chilli

Step 1

In a large pot of water, place ribs, over high heat bring to a boil. Add salt reduce heat and simmer 30 minutes. Meanwhile grate zest from oranges and squeeze juice. Place both in a small bowl, add catchup, molasses, vinegar, onion, pepper sauce and chilli powder, stir to combine. Preheat oven to 350. Spray a 13x9x2 inch baking pan with nonstick cooking spray. Pour 1/2 cup sauce in bottom of pan. Drain ribs and pat dry. Place ribs, meaty side down in dish, cover with remaining sauce. Bake 30-45 minutes, turning ribs once, until very tender. Remove from oven and let stand about 15 minutes to cool slightly, then place ribs and sauce in rock and serve large deep container,seal, rock vent to close position and refrigerate up to 3 days or freeze up 2 months. To reheat from refrigerator rock vent to open position, place container in microwave oven. Heat on medium high 10-12 minutes, rearranging ribs once, until heated thoroughly. To reheat from freezer, fold vent to open position, place container in microwave oven. Heat on medium 20-22 minutes, rearranging ribs once after 15 minutes, until heated thoroughly.
