CURRIED SHRIMP AND RICE

Ingredients
- 1/2 tsp vegetable oil
- 1 pound medium-sized fresh, peeled, deveined shrimp
- 1 1/2 tsps curry powder
- 1/2 cup low-sodium chicken broth
- 1 (16-oz) bag frozen broccoli, cauliflower and carrots
- 3/4 cup uncooked instant rice
- 1/4 tsp salt

Step 1
Heat 1/2 tsp oil in large non-stick skillet over medium-high heat. Add shrimp and curry powder, and stir-fry 3 minutes. Remove shrimp from skillet, and set aside.
Add chicken broth and vegetables to skillet; bring to a boil, and cook 1 minute. Stir in rice and salt; place shrimp on top of rice mixture. Remove from heat, and let stand, covered, 6 minutes or until liquid is absorbed.
