Ingredients
- 1 8-pound shank smoke ham
- 2- 46 oz cans pineapple juice
- 1/4 cup plus 2 tbs brown sugar
- 1/3 cup honey
- 1 tbs mustard

Step 1
Place ham in a stock pot and cover with pineapple juice to cover 2/3 of ham. Add 1/4 cup brown sugar. Bring to boil- cook 15 min. Turn ham over and cook 15 min. Remove from heat and let ham cool in juice x 1 hr. Preheat oven 350* Place ham in roasting pan. Cover with foil. Bake for 30 min per pound or 4 hrs for 8 pounds. In a small saucepan, combine honey, mustard, and 2 TBSP brown sugar and bring to boil. Remove ham and glaze with some of the honey mixture. Return to oven x 10 min uncovered. Garnish with pineapple slices and glaze again and return to oven uncovered x 15 min. let cool before slicing.
