  • 2/3 cup flour
  • 1/2 cup yellow cornmeal
  • 1 Tbsp. sugar
  • 1 1/2 tea. baking powder
  • 1/4 tea. salt
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup thinly sliced green onions
  • 1 (8 3/4 oz) can cream-style corn
  • dash of hot sauce
  • 1 egg, lightly beaten
  • cooking spray

Preparation

Step 1

Preheat oven to 375 degrees.

Combine flour, cornmeal, sugar, baking powder and salt; stir with a whisk.

Combine cheddar cheese and the remaining ingredients in a small bowl; stir with a whisk. Add cheese mixture to flour mixture, and stir just until moistened.

Divide batter evenly among mini muffin cups coated with cooking spray. Bake at 375 degrees for 10 minutes or until golden brown. Cool in cups 2 minutes; remove from pans. Cool completely on wire racks.

Yield 36 mini muffins
