Ingredients

  • 4 Tablespoons butter, melted
  • 1 cup fake eggs
  • 1 cup chicken broth
  • 1 loaf (16 oz) day-old bread (16 slices) cut in 1/2 cubes
  • 1/2 cup minced scallions
  • 1/2 cup minced celery
  • 1 cup dried cranberries
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon grated lemon zest
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 teaspoon poultry seasoning

Preparation

Step 1

1. Preheat oven to 375 degrees. Coat 16 muffin cups with Pam. In a large bowl, combine butter, egg substitute and broth. Add remaining ingredients and toss to combine. Set aside for 15 minutes.

2. Pinch bread; if dry, add 1/4 cup warm water. Toss. Mixture should be soft and spongy, but not mushy. With an ice-cream scoop, spoon into muffin cups. Bake for 20-25 minutes.
