Zuchini Bread

This is a breakfast or desert bread. It has been a family favorite for years. Deb brought the recipe home from grade school.

Ingredients
- 3 Eggs
- 1 1/2 C sugar
- 1 C oil
- 1 tsp. vanilla
- 2 C coarsely grated zucchini
- 2 C Flour
- 1/4 tsp. Baking Powder
- 2 tsp. Baking Soda
- 1 tsp salt
- 3 tsp. cinnamon
- 1 C raisins
- 1 C chopped nuts

Step 1
Preheat oven to 350
Beat eggs till frothy, Add sugar, oil and zucchini, vanilla and salt. Sift together dry ingredients.
mix 1 tbsp of flour mix with nuts and raisins. Add dry ingredients gradually to egg mixture . Stir in nuts and raisins. Pour into 2 greased loaf pans. Bake at 350 degres for 1 hour. M-m-m-m-m-m good.
