  • 5 medium potatoes (grated)
  • one finely grate onion
  • 2 eggs well beaten
  • 1/2 - 3/4 cup matzo meal
  • 1/2 t baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Step 1

1. grate the potatoes and put in a colander - let stand for several minutes and then drain off all the excess water.
* The more water removed the better.

2. after the potatoes are drained, transfer to another large bowl and add all other ingredients and mix well. it will be kind of pasty!! if mixture seems too thin, you can add a tablespoon of flour.

3. put about a 1/4 inch layer of oil in a frying pan - heat oil over medium heat.

4. drop potato mixture by spoonfulls (tablespoon size) and spread evenly with back of spoon.

5. fry on both sides until dark golden brown.
* crispy is the way to go, but you just want to make sure the latkes are cooked all the way through.

6. drain finished latkes on paper towels or brown paper bags.
* you can put them in a low oven to keep warm until the rest are finished
