This is a very simple and easy recipe and yet, it goes over very big with anyone who has tried them. They melt in your mouth! I make them for functions all through the year and I always get asked for the recipe. It is from a Pillsbury Classic Cookbook (the type you get on the stands at the grocery checkout).

Ingredients

  • 1 cup shortening (Butter flavor Crisco is good!)
  • 1/2 cup sugar
  • 1/2 cup firmly packed brown sugar
  • 1/2 teaspoon vanilla
  • 1 egg
  • 2 c all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 teaspoon salt
  • ......................
  • 1/4 cup sugar

Preparation

Step 1

Heat oven to 350 degrees.

In large bowl, beat shortening, 1/2 c sugar and brown sugar until light and fluffy. Add vanilla and egg; beat well. Lightly spoon flour into measuring cup; level off. Stir in flour, baking soda and salt; mix well.

Shape dough into 3/4" balls. Place 2" apart on ungreased cookie sheets; flatten balls to 1/8" thickness with bottom of glass dipped in 1/4 c sugar. Bake 7-12 minutes or until light golden brown. Cool 1 minute; remove from cookie sheets. 5 dozen cookies.

TIP: Decorate with colored sugar to suit the occasion. I sprinkle red or green sugar crystals on top for Christmas, pink or red for Valentine's Day or if you prefer just leave plain.

HINT: I frosted the tops of the cookies once with icing and they got soft and soggy, so now I just use the colored sugars to decorate.
