Ingredients
- 1 1/2 lbs. smoked beef sausage or Polish
- 1 large onion cut into chunks, cut in half then each half into fourth's.
- 2 1 lb. can's green beans
- 5-6 potatoes, cut into chunks, or use small red potatoes 8-10 left whole.

Step 1
Cut the sausage into 3" chunks, Place in a 6 quart pan along with the onion, bean's and potatoes. Add enough water to just cover bean's and potatoes. Bring to a boil, turn down to simmer and cook till potatoes are tender. Do not drain water from bean's and do not add salt until you taste. I very seldom add salt.
If you wish to halve recipe just use a 3 quart pot and procede with recipe.Inexpensive, and delicious with cornbread or corn muffins.
This is my go to meal when I don't have much time for a good meal.
